We are the fourth generation of a family dedicated to the production of the highest quality extra virgin olive oil . We began working in La Rambla in the second half of the 19th century and currently sell premium olive oil of the highest quality from Montilla. Carpaccio de calabacín con queso de cabra y AOVE

Zucchini carpaccio with goat cheese and extra virgin olive oil

Ingredients:

  • 1 medium zucchini.
  • 100 g of goat cheese.
  • 50 g of shelled walnuts.
  • Fresh mint leaves.
  • Salt and black pepper to taste.
  • Extra Virgin Olive Oil from Molino Juanito Ortiz.

Preparation:

  1. Wash the zucchini well and, without peeling it, cut it into very thin slices. You can use a mandoline to make them perfect.
  2. Place the zucchini slices on a plate to form a layer, as if it were a traditional carpaccio.
  3. Crumb the goat cheese and sprinkle the pieces over the zucchini.
  4. Chop the walnuts into small pieces and add them along with the mint leaves, which will give it a touch of freshness.
  5. Season with salt and freshly ground black pepper.
  6. To finish, drizzle generously with your Molino Juanito Ortiz Extra Virgin Olive Oil. A good pour of oil will enhance all the flavors and give it the perfect finishing touch.
